Creamy harissa butter beans.
These creamy harissa butter beans take no time at all. Cook fresh butter beans or use canned and whip up the sauce in a matter of minutes for a simple and hearty main that can be eaten with bread, or veggies, or grains.
Method

Chop the onion (1) and sun-dried tomatoes (6) and grate the garlic (1 clove).

In a wide pan on medium heat, add the sun-dried tomato oil (2 tbsp) or olive oil and the onion along with a pinch of salt and sauté for 5 minutes until translucent.

Then add the garlic and sun-dried tomatoes and sauté for 1 minutes before you add the harissa paste (1 tsp).

Stir it in for a minute, then add the water (150 ml) bit by bit.

Continue with the butter beans (450 g) and a generous pinch of salt and ground black pepper and stir everything well to combine.

Add the soya cooking cream (250 g) and cook for 2 minutes.

Lastly finish it with the fresh spinach (50 g) and cook for a further 2 minutes until just wilted.
Serve with your favorite bread.
