Honey Oat Bites.
No-bake wholegrain oat flapjack bites with honey and mixed seeds - a homemade take on the classic honey and mixed seed flapjack.
Method
-
Line a 20cm square tin with baking paper.
-
Melt honey (100 g), golden syrup (75 g) and butter (50 g) together in a saucepan over low heat, stirring, until smooth and runny.
-
Take off the heat and stir in light brown sugar (20 g) until dissolved.
-
Add rolled oats (220 g), linseeds (20 g), sunflower seeds (20 g) and pumpkin seeds (10 g) to the pan and mix well until everything is fully coated.
-
Stir in a pinch of salt (1 pinch).
-
Tip the mixture into the lined tin and press down firmly and evenly with the back of a spoon or spatula.
-
Chill in the fridge for at least chill 1 hour, or until firm.
-
Turn out and cut into 12 bars or bites.
Store in an airtight container in the fridge for up to a week.
For a firmer, chewier bite, warm the honey mixture for a minute or two longer before adding the oats.
For extra protein, stir in a spoonful of soy or pea protein powder with the oats.
