Peanut Butter & Chocolate Oat Bites.
No-bake wholegrain oat and peanut butter flapjack bites with mixed seeds and dark chocolate - a homemade take on the classic peanut butter & chocolate flapjack.
Method

Line a 20cm square tin with baking paper.

Melt peanut butter (150 g), golden syrup (75 g) and butter (50 g) together in a saucepan over low heat, stirring, until smooth and runny.

Take off the heat and stir in light brown sugar (30 g) until dissolved.

Add rolled oats (200 g), linseeds (20 g), sunflower seeds (20 g) and pumpkin seeds (10 g) to the pan and mix well until everything is fully coated.

Stir in roasted peanuts, chopped (30 g) and dark chocolate chips (40 g), saving a small handful of chocolate chips back if you'd like to scatter some on top.

Tip the mixture into the lined tin and press down firmly and evenly with the back of a spoon or spatula.

Scatter over the reserved chocolate chips, then chill in the fridge for at least chill 1 hour, or until firm.

Turn out and cut into 12 bars or bites.
Store in an airtight container in the fridge for up to a week.
Swap the dark chocolate chips for milk or white chocolate if you prefer.
For extra protein, stir in a spoonful of soy or pea protein powder with the oats.
